I’ve never made Strawberry Muffins before, but yesterday I found myself staring at half a punnet of strawberries and thought I might smother them in chocolate and inhale them with some sort of champagne based chaser channel my inner 1950’s housewife and whip up a batch of muffins with them.
My kids don’t usually go for any sort of baking that has fruit it in, so I did think about adding in a handful of chocolate chips, but with 1/2 a cup of sugar in the mix, I figured they’d be sweet enough!
Fortunately I was right and the kids devoured a couple each for afternoon tea. I’ve also thrown one into each of their lunch boxes this morning, so this easy to make strawberry muffin recipe really is the baking gift that keeps on giving!
