I don’t know about you but around here the Back to School countdown is well and truly on!
The books have been covered, the new uniforms have been washed and are waiting patiently to be ironed and the school shoes have been bought. All we need now is for the calendar to tick over to Wednesday and we are good to go!
Yesterday I did a bit of baking, in readiness for the lunch boxes I’ll be filling again next week, and thought I’d share the recipes with you too.
Back To School Lunchbox Ideas
The first thing I made was these delicious Ham and Cheese Muffins.
While they’re best eaten hot out of the oven, preferably with lashings of butter, they also freeze really well. Simply wait until they’re completely cool, wrap each one in glad wrap and throw them in the freezer.
Each morning, when I’m making the lunches, I just open the freezer, take out a couple of muffins and put them in the kid’s lunch boxes. By morning tea time, they’re thawed out and ready to be inhaled! You can find the recipe right here.
I also made a loaf of Banana Bread, which again, can be sliced, wrapped in cling wrap and frozen once it’s completely cooled.
