Ever wondered how to make an ice cream cake? You know, the kind that has all sorts of sugary treats smashed through it that makes your teeth ache just by looking at it? Well wonder no more, because I’ve got a step by step guide that you are going to love!
I made this Ice Cream Cake for Sophie’s 10th birthday celebrations. She had a Glamping Party with her friends a few weeks ago (click here for all the party details!) and yesterday was Sophie’s actual birthday.
We celebrated with a small morning tea, which Pixie, our cheeky Elf On The Shelf, put together the night before (click here to see what else Pixie has been up to!)
and enjoyed a slice of delicious Ice Cream Cake after we’d sung Happy Birthday.

It’s a really easy cake to make and I pretty much just made the recipe up as I went along. Here’s how you can make one at home too!
How To Make An Ice Cream Cake
Step One: Get your ingredients organised:
1. A tub of ice cream 2. A cake tin (any size/shape) 3. A packet of caramello koalas 4. a packet of sprinkles 5. a packet of Oreos 6. cling wrap
I used caramello koalas, sprinkles and Oreos because they’re Sophie’s favourite. The beauty of this recipe is you can throw anything you like into the ice cream cake mix. Let your imagination go wild and have a bit of fun with it!
Step Two: Line the cake tin with cling wrap. This will make the ice cream cake really easy to remove once it’s all done.
Step Three: Scoop out three generous serves of ice cream from the tub and add one ingredient. I started with sprinkles.
Step Four: Tip the ice cream mix into the cake tin and spread with the back of a spoon or your hands. I started with the spoon, but the ice cream slid all over the place, so I pressed it into place with my hands which was a much easier approach!
Step Five: Place the cake tin in the freezer, while you get started on mixing the next layer of ice cream (if you live in a hot climate like I do, this will ensure the ice cream doesn’t melt while you’re mixing in the next lots of treats with your ice cream. If you live in a cold climate and are currently surrounding by snow, you can probably leave the ice cream cake on the bench!)
Now when it comes to adding biscuits/cookies to your mix, you could smash them up and mix them into the ice cream, but I decided to simply add a layer of Oreos to the ice cream cake instead:
Step Six: Place the cake back in the freezer and get started on your next layer.
Step Seven: Finish with a layer of sprinkles and place in freezer until ready to serve
Step Eight: Once the ice cream cake is completely set, you can remove it from the tin.
I simply ran a knife around the edge of the cling wrap and pushed the bottom of the cake tin to the top. The cake slid out and I wrestled the cling wrap from it before quickly placing it on a cake stand.
I then covered it in cling wrap and placed it back in the freezer until it was time to sing Happy Birthday.
And that’s how you make an ice cream cake!
