This week, all around Australia, Mums and Dads are madly ironing school uniforms, polishing shoes and furiously cutting the crusts of sandwiches. All because the school year is about to start. Finally!
Now I don’t know about you, but I try to pack a variety of healthy, easy to eat goodies in my kid’s lunch boxes. You know, something that they can quickly gulp down before heading off to play hand ball with their friends!
Baked goods definitely fall into this category and this week I thought I’d share a few of my favourite lunch box recipes with you.
So today we’re kicking things off with how to make ham and cheese muffins.
They’re really easy to make, taste delicious, have zero sugar AND can be frozen for up to 3 months. I make a batch of these once a fortnight, freeze them and throw one in the kid’s lunch box each morning. By lunch time they’re completely thawed out and ready to be eaten. Too easy!
