A delicious cookie dough brownie recipe, featuring a mouth watering brownie base and a soft, chewy chocolate chip cookie layer on top.
Yesterday Sophie felt like doing some baking (“Something different Mum. Something we’ve never made before”) so I did a quick search on Pinterest and stumbled across this recipe for Cookie Dough Brownies.

Because the tablets I’m on for this IIH thing I’ve got are knocking me around a bit (think wanting to sleep longer than a bear in hibernation with a side serve of fairly painful pins and needles in your feet with a dash of no appetite thrown in for good measure. I know. GOOD TIMES!), Sophie made these herself.
They do involve a bit of a two step process, in that you need to make the brownie mix first then make the cookie dough mixture to go on top, but I reckon if a 10 year old can manage that pretty much anyone can!
And let’s face it, the end result is so delicious, it’s definitely worth getting two bowls out of the cupboard!
- 4 tablespoons butter, melted
- 1/3 cup cocoa powder, sifted
- 1 egg
- 3/4 cup sugar
- 5 tablespoons self raising flour
- 5 tablespoons butter, softened
- 3 tablespoons brown sugar
- 3 tablespoons white sugar
- 1 egg
- 1 1/4 cups self raising flour
- 1 cup chocolate chips
- Preheat oven to 200 deg C and line a baking dish with baking paper.
- Mix together all ingredients in a medium bowl and pour into the baking dish. Set aside while you make the cookie dough layer.
- In a medium bowl, mix together the butter, brown sugar and white sugar. Add the egg. Slowly mix in the flour and stir in the chocolate chips.
- Carefully place large dollops of the cookie dough mixture on top of the brownie layer and spread.
- Bake for 30 minutes, or until the mixture is golden brown.
- Remove from oven and set aside to cool slightly before slicing.
On a random side note, how much do we love my new chopping board?! It was a gift from my cousin, purchased from an online company in NZ, but I did a quick search yesterday and there are quite a few businesses on Etsy selling similar products, so if you’re after a personalised chopping board, that might be the place to look.
