Last year I made this Christmas Cake and it went down a treat on Christmas Day. And Boxing Day. And pretty much the next 7 days after that. It’s safe to say it’s a fairly decent sized cake.
This year I thought I’d use the same recipe to make a Mini Christmas Cake or five, which just quietly, look a little bit cute and are the perfect size for two to enjoy!
Here’s what you’ll need to make your own Mini Christmas Cakes at home this festive season.
Mini Christmas Cake Gifts

Ingredients
- 8x 10cm cake liners/tins
- 1 cup raisins
- 2 cups sultanas
- 1 cup currants
- 1 cup slivered almonds
- 1 cup pitted dates, chopped
- 3/4 cup cointreau or brandy
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1 teaspoon all spice
- 300g butter, softened and chopped
- 1 cup caster sugar
- 1/4 cup brown sugar
- 4 eggs
- 2 1/4 cups plain (all-purpose) flour
- 1/4 teaspoon baking soda
Instructions
- Preheat the oven to 150 C (300 F)
- Lightly grease your cake liners/tins
- Place the raisins, sultanas, currants, dates and cointreau in a medium saucepan.
- Stir oven medium heat for 5 minutes or until most of the cointreau has soaked into the fruit. Remove from heat and let cool slightly.
- Place butter and sugars in a bowl and beat for 4-5 minutes or until light and creamy.
- Add the eggs, one at a time, beating well after each addition.
- Sift flour and baking soda over the fruit mixture and mix well, ensuring all of the fruit is coated in flour.
- Add the fruit mixture to the butter mixture and stir to combine.
- Add the slivered almonds and combine.
- Spoon the prepared mixture into your cake tins/liners and bake for 1 hour 30 minutes or until a skewer comes out clean.
- Allow cakes to cool before serving or wrapping to give as gifts.
Notes
- Check the cake after an hour and cover with aluminium foil to prevent excess browning/burning, if required.
- Cakes will keep in an airtight container in the fridge for up to a week.

Hi Janine. I picked up the cake liners at Wheel and Barrow for 95cents each. And the cellophane bags are from Riot Art and Craft. I’m not sure where you live but both shops have online stores so hopefully you’ll be able to get your hands on them without too much trouble!

I am a Christmas Cake fan. These look delicious and love your styling too ๐ I’m making Christmas cake ice cream this year (health kick) so I’ll have to try next year. There is a mum at school who makes mini Christmas cakes as gifts. We are always excited to receive them because of the home made effort…and they are so good!
